Sausage Recipe 5 lbs: (I got 16 links and 1 pound of uncased sausage meat)
I used a total of 3 different kinds of pork for this sausage, you can use only one kind if you want.
TOTAL OF 5 LBS OF PORK:(will need to cube and grind all the meat.)
2.5 lbs pork butt (no skin)
1/2 pound pork belly (no skin)
2 lbs country pork ribs
34 g salt
3 tbsp toasted fennel seeds
(optional): 1/2 tsp fennel pollen
1 tbsp black pepper
1 tsp white pepper
2 tbsp Thai dried chili (if you’re using normal chili flakes, use 4 tbsp)
2 tbsp smoked sweet paprika
8 cloves garlic
3 tbsp white wine
For the sandwich I used:
Cubanelle peppers
red onions
red bell peppers
provolone cheese
marinara sauce
