Baby Octopus tomato sauce – BEST RECIPE – Italian "guazzetto" (original)

In this videorecipe I will show you how to cook baby octopus with a super-tasty tomato sauce, called “guazzetto” in Italian.

Is this one of my top recipes? Probably it is! I just love cooking baby octopus in this style, because I can then dip some grilled bread in the tomato sauce that I made with the extra flavour coming from the baby octopus liquid.

If you like it spicy, I definitely recommend you add some chili to the mix, because it’s just going to make things better! As a finishing touch, you may want to sprinkle some freshly chopped parsley on top, crack open a bottle of chilled white wine, and pretend you are in front of the sea eating this phenomenal dish!

Baby Octopus tomato sauce – RECIPE

Prep Time: 20 mins
Cook Time: 120 mins
Complexity: Easy

Ingredients (4 people):
– 1 kg baby octopus (cleaned)
– 700 gr Tomato Passata
– 1 glass of white wine
– extra-virgin olive oil
– parsley
– garlic
– salt and pepper

Procedure:

1. Make sure you clean your baby octopus first (ask your friendly fishmonger to remove eyes and gut/entrails);
2. Try to cut each baby octopus in similarly sized pieces: head in half and body in quarters, depending on the size of the baby octopus you have;
3. Heat a pan, pour some olive oil, a couple of cloves of garlic and some freshly chopped parsley (add also chili if you wish). When warm, add the baby octopus in there;
4. Make sure you cover with a lid and let this cook at medium heat for 10 minutes;
5. After 10 minutes, you can uncover the pan and let all that liquid evaporate slowly. Depending on how much is in the pan, this process can take even longer than 1 hour. Be patient, sit down and relax;
6. You know that you are done when the liquid produced by the baby octopus is gone and the baby octopus is about to stick at the bottom of the pan. This is the moment to pour the glass of wine in;
7. When the wine evaporates, you can add the tomato passata. Let everything cook for about 20 minutes at low-medium heat;
8. Remove the garlic and add a bit of salt. Stir and plate;
9. Serve with chopped parsley on top and a nice slice of grilled bread…
10. ENJOY!

ITALIAN FOOD BOSS SPECIAL TIP: When you are cooking the baby octopus, keep that lid closed for the first 10 minutes! You know that the octopus is ready for the sauce when they are almost sticking at the bottom of the pan.
