Cacciatore is an Italian sauce dish traditionally made with chicken or rabbit. Typically made with tomatoes, sweet peppers, mushrooms, onion, garlic, herbs & wine.

INGREDIENTS:
3-4 Pieces Italian Sausage (Sweet, Mild, or Hot)
1 whole sweet pepper
1/2 cup yellow onion
2 garlic cloves
2 Tablespoons Extra Virgin Olive Oil
1/2 cup red wine (If you won’t drink it, don’t cook with it!)
1/2 cup chicken stock
28 oz. can Tomato Sauce (Can substitute whole or chopped tomatoes)
1 Tablespoon brown sugar
1 Tablespoon chopped oregano
1 Tablespoon chopped parsley
2 Tablespoons fresh grated parmesan (Plus more for topping pasta)
COOKING INSTRUCTIONS:
In a heavy cast iron braiser on medium low heat brown sausage links with casings on.
While sausage is browning chop pepper, onion, garlic, & herbs.
Remove sausage from pan and set aside to cool before slicing.
To the same braiser on medium heat, add Extra Virgin Olive oil. When oil is hot sauté pepper & onion until translucent. Salt & pepper to taste.
Slice sausages into bite size pieces
Add chopped garlic and sauté for one minute
Add 1/2 cup of red wine & reduce until almost all the liquid is gone.
Add sausage back to pan and sauté for another minute or so.
Add 1/2 cup chicken stock & Stir
Add tomato sauce & stir.
Salt & pepper to taste
Add fresh herbs, brown sugar, & parmesan cheese.
Reduce heat & simmer at least an hour before serving.
Serve over pasta or rice.
