In this PIATTO™ video recipe, Italian Grandma Margherita will share with us a traditional Christmas Italian dessert from the Umbria region of Italy. Called panpepato or ‘pampepato,’ this easy recipe is rich in spices and two holiday favorites: chocolate and nuts!

Similar to panforte (a Tuscan Christmas dessert), the Italian tradition of combining variations of nuts, flour, chocolate, honey and spices to make a tasty treat dates back to ancient times (1500’s). In fact, the Tuscan panforte was originally called panpepato referencing the pepper used in the recipe. The name ‘panpepato’ literally means ‘peppered bread.’

In Umbria, the panpepato is often exchanged at Christmas as a holiday gift among family and friends. Each family has their own variation. Here, we show a recipe that excludes raisins and candied fruit, which not everyone enjoys. However, feel free to add them and more black pepper if you like your panpepato extra ‘strong.’

Here, Italian Grandma Margherita also demonstrates an easy way to gift wrap these Italian Christmas chocolates for the holiday season.

INGREDIENTS (for around 10 pieces)
walnuts – 3 cups of halved (400 g) (untoasted)
hazelnuts – 3 1/2 cups (500 g) (toasted)
almonds – 3 cups whole (300 g) (toasted)
pine nuts – 3/4 cup (100 g) (untoasted)

sweet cocoa powder – 1 tbsp
cinnamon – 1 tsp
nutmeg – 1 tsp
caffé – 1 tsp (instant coffee or espresso powder)
black pepper – 1 tbsp or to taste
orange zest – from one orange
flour – 3/4 cup (100 g)

dark chocolate – 12 oz (350 g) (shaved or cut into tiny pieces)
honey – 1/2 cup (250 g)
caffé espresso – shot, or small cup

Bake at 375 F
for 10-15 minutes
