Who loves panettone?? Christmastime means panettone time – and I’m going to show you how to make this delicious Christmas tiramisu using panettone!!!
5 Eggs, separate egg yolks and whites
5 tbsp Sugar
500g Mascarpone Italian Cream Cheese
450ml 35% heavy cream
750g Panettone, cut into 1/2 inch thick slices
1 1/2 Cups Espresso, cold
1 Orange, fully zest and squeezed
Take the panettone slices and on a baking sheet heat in an oven at 350 degrees for 10 minutes or until golden and crisp, remove and set aside.
Separate the egg yolks from the egg whites. In a large bowl with the egg yolks add the sugar and beat until the yolks look a pale yellow colour. Add the mascarpone and the zest of 1/2 an orange and beat with the egg yolk and sugar mixture until you get the texture like a custard.
Whip the heavy cream until stiff peaks form.
Whip the egg whites until stiff peaks and then combine and fold in the large bowl with the mascarpone cream and whipping cream for a uniform tiramisu cream and set aside.
Add the juice of 1/2 orange into the espresso and dip the panettone quickly into the cold espresso. You don’t want to over dip and make the panettone soggy.
In a baking pan, lay in 1/2 of the espresso dipped panettone to cover the bottom, and 1/2 of the tiramisu cream. Spread the cream fully covering the panettone. Continue with a second layer on the tiramisu cream with the remaining espresso dipped panettone. Spreading the remaining tiramisu cream covering all the panettone. Top with remaining 1/2 orange zest and cover with plastic wrap and let rest in fridge for minimum 4 hours.
