CHICKEN WITH MUSHROOMS AND WINE SAUCE | LOW FAT | COOKBOOK CHALLENGE |WEIGHT WATCHERS RECIPE | EASY

This CHICKEN WITH MUSHROOMS AND WINE SAUCE is from an old WW cookbook. It is so easy to make and very tasty. Very low in fat and calories. With a side salad and couscous, this dinner came to less than 400 calories! I made a few tweaks in the recipe, so below is my recipe.

RECIPE:
Serves 4 people

4 chicken breasts, skinless and boneless (5-7 ounce uncooked for 1 serving) (I used 1 14 ounce chicken breast and cut it in half to serve 2 people)
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
2 teaspoons of olive oil
1/2 pound mushrooms sliced (I used baby bellas)
2 shallots sliced (or you can use one medium yellow onion)
1 carrot chopped
1 celery stalk, chopped
2 garlic cloves, minced
1 teaspoon Italian Seasoning
1 tablespoon all purpose flour
1 cup low sodium chicken broth
3/4 cup dry white wine
2 tablespoons chopped fresh parley as garnish (optional)
1 package of garlic and olive oil couscous

Instructions:
First heat your skillet. Add 1 teaspoon of the oil into the skillet. Season chicken with salt and pepper and place in skillet. Turn down heat to medium. Cook on each side for about 6 minutes (3 on each side) until slightly browned on both sides. Set the chicken aside on a plate.

Add another 1 teaspoon of oil and stir in the sliced mushrooms into the skillet. Cook while stirring frequently for about 5 minutes. Stir in the shallots (or onions), carrots and celery. Add the minced garlic and Italian seasoning. Cook until the shallots are softened, approximately 3 minutes. Sprinkle with the flour. Cook and stir constantly for another minutes. Add the broth and wine and bring to a boil.

Place back the chicken breasts into the pan with the sauce and cook at medium to medium low for 20 minutes or until chicken is thoroughly cooked.

You can serve this with pasta. I served mine with a boxed garlic & olive oil seasoned couscous. YUM!
