Easy Italian Beef & Egg Noodle Casserole

Eat it or Freeze it, this is an easy family meal . Your family will love it and finicky eaters will ask for more.
INGREDIENTS
8 oz. egg noodles
1 tablespoon or swirl in pan of olive oil
I cup chopped mushrooms
2 pods garlic
1 1/2 to 2 lb. ground beef
1 16 oz can tomato sauce
8 oz or 1/2 cup sour cream
16 oz (2 cup) cottage cheese
italian seasoning, salt & pepper to taste
season with salt and pepper, garlic salt
1 bunch chopped green onions
1 1/2 cups grated cheese of your choice ( I like to mix mozzarelli and cheddar)

Put egg noodles in a pot of boiling water on the stove top, cook to al dente . In a separate pan saute mushrooms and garlic in olive oil until mushrooms are limp. Remove from pan . Brown ground beef in same pan. Add seasonings to taste to the ground beef. Drain when browned. Add the can of tomato sauce to the browned meat & stir. Add the sauted veggies, stir in and turn flame low to simmer while egg noodles are cooking. While it’s cooking, in a separate bowl mix together sour cream & cottage cheese. add italian seasoning & salt & pepper to taste, Stir in chopped green onions.
When egg noodles are al dente, drain. Add the draied noodles to the sour cream mixture & stir together.
Now, lets assemble the casserole. Layer starting with 1/2 the noodle mixture then 1/2 the meat mixture & layer with grated cheese then do same thing again. I add extra cheese on top layer.
Put in the oven at 350 until hot and bubbly or freeze for another time. When the center of the casserole is hot, it’s ready to eat.
I serve mine with garlic cheese bread & salad.
