Bocce Balls
Mix together
1 lb ground pork tenderloin
2 lbs ground fillet mignon
3 eggs
1C Italian seasoned breadcrumbs
3 T dried parsley flakes
1 T dried basil
1/2 C parmesan cheese graded
1/4 C Romano cheese grated
Soak the bread in wine then mix to the above ingredients
1C cubed day-old Italian bread
1/3 C Red wine
Sauté onions and garlic then mix with the above ingredients
1 large onion diced
8 cloves garlic minced
2 T garlic spread
Once everything is mixed together form into 2 to 3 inch balls and refrigerate for two hours. Remove from refrigerator bake at 400° for 40 minutes. Remove from oven top with sliced mozzarella cheese and broil for five minutes till Cheese gets golden brown.
Serve over pasta and marinara, and then top with the cottage cheese mixture and sprinkle with additional Parmesan and mozzarella cheese and fresh or dried basil to garnish
Mix together, then add salt and pepper to taste. This will be the garnish that goes on top of the bocce ball before serving
1/2 C. Small curd cottage cheese or ricotta cheese
1/4 C grated Parmesan cheese
