Italian Sausage Soup * Quick & Easy Recipe

Easy Sausage Soup

1 lb. ground Italian Sausage
1 cup chopped onions
1 chopped medium zucchini (you can substitute kale)
1 finely chopped garlic clove
Red pepper flakes to taste
28 oz. diced roasted tomatoes
Italian Seasoning to taste
Approximately 48 ounces chicken or vegetable broth
1 large carrot chopped
15.5 ounce can cannellini beans, drained & rinsed
Bay leaf

Brown Sausage, onion and carrot. Add red pepper flakes and garlic when sausage is almost browned. When sausage is completely browned add all of the remaining ingredients. Bring to a boil then immediately turn down to simmer. Simmer for approximately 20 minutes. When finished, remove bay leaf from soup. Soup can be garnished with freshly grated parmesan cheese. Serve with a nice crusty bread.
