The made daily fresh Gnocchi at Eataly in NYC is superb and as good or better than most restaurants I’ve tried. I assume it’s similar quality at Eataly’s in other cities.

I make gnocchi often, but add ricotta to mine (as well as potato). And yes, it IS an authentic italian recipie. As guy noted, gnocchi can be made out of a million things, so there is no ONE way to do it, despite her implying hers is the "right" way. The addition of ricotta makes for the most pillowy softness. Even my hard headed typical judgemental italian mother in law admits my gnocchi is better than the one she has made all her life.
I need to try my Nonna's Gnocchi recipe again, and this time, I'll be the one doing it instead of watching or, like Eva, performing the minor parts of the process. I definitely want to try Gnocchi alla Sorrentina. ☺

Being type 2 diabetic, it is a form of torture watching your videos, since I cannot eat pasta, unless its the very expensive KETO pasta I can only order on the internet.
The whistling music in the background while Ava was cooking was so interesting, hauntingly beautiful and captivating to me that I was very distracted by it.
So distracted that i would miss the visual part of this WONDERFUL podcast over and over and over again. I'm a bit sleep deprived at the moment.
After several attempts to stay focused on the visual and not zone out with the music AGAIN i finally just muted it and was finally able to stay attentive to everything i had repeatedly missed so many times visually.
The visual part of this video was equally wonderfully done. I loved all the slow mo and other effects that went perfectly with the melodic whistling. Wonderful!
