My mother would do this every when the season ended. But not only tomatoes but with pickles and cabbage as well. It was delicious.

What sort of applications do pickled green tomatoes have? They sound like they're delicious.
I'm always nervous when it comes to sterilization of things, I'm always anxious. Most of the time I cheat where I am able, such as when I make stock I'll freeze the jar and thaw them when I need them since they keep for a long time and don't require a lot of effort, though with something like Mead I will do my best with scalding water and appropriate chems for sterilizing my space and tools and bottles since those will be sitting at room temperature for literal years. Some day I might be brave enough to can foods. Maybe if someone teaches me how to do it in-person, if I can find a class for it.
I wonder if this would work with balsamic vinegar.

My grandmother used to pickle unripe tomatoes in vinegar. They are delicious just on some buttered bread or as part of a salad.
It's a great way to use up those unripe crops at the end of Summer which are inedible raw, but become something totally different when pickled or fermented.
In România whe called them gogonele. There are the same thing

They are also great when naturally lacto fermented for kosher style pickled green tomatoes. I chop them up with cucumbers and onions to make a great sweet pickle relish also.

Hi Vincenzo! This question is a little off topic of this video. Could you make a vid/ series of how to make cheap Italian food? In Norway these days it's extremely expensive to make Italian food (I guess not only in Norway). I'm a huge Italian food lover, but now as a student, it's difficult. To buy high quality products like better veggies (bad veggies are cheaper for some reason), good extra virgin olive oil, even the basic pasta (of some degree of quality) is insanely expensive. I simply can't afford to make Italian food anymore. I can f.ex now just forget about making traditional bolognese, which I loved to make in the past (then still expensive but not as now).. So I would like to get some tips, cause I would still like to make good Italian food, but with these prices 🙂
So my question: could you make ideas to make cheaper, italian inspired food, cause most traditional recipes are way beyond my league price wise. Especially traditional pasta dishes, carbonara and such.
I will bribe you and say that if not, I will buy cheap and bad finished made italian dishes, which I know you don't like, hehe 😉 Or simply not make italian food at all!

After you've eaten the tomatoes, can you use the oil for cooking or something else (maybe salad?), or is it just thrown away at the end?
me siento decepcionada, de todas las recetas del mundo italiano que he buscado, pensaba que ibas a tener la de la PIZZA MARINARA!!!!!!!!!!! la mas simple, pero NO tan simple, oh que vergüenza, tendré que buscarla en otros canales. Of ALL recipes in the italian world, i was thinking that YOU would have the "MARINARA PIZZA RECIPE"!! but nooooo T^T, is simple, but hard one, oh shame on you, shame on you!!! I need, to search the marinara perfect recipe in OTHER channels!!! oh good thor god wat a shame. I would say something like "mamma mia"…. but i'm chilean so:
