My friend told me that the pasta texture is not pasta like, perhaps she meant it’s not chewy enough? I use 240g of plain flour (all purpose flour), 60g semolina flour, 2 eggs and 3 egg yolks. Knead the dough for around 20 mins, rest for 30 mins, and roll it through the pasta machine (0,0,0,1,1,2,2,3,3,4,4,5,5,6) then cut it with a knife. Not sure if I over cooked it or there’s something else that I did wrong. Sauce is good though.
