well we wanted to stick with the cooking trend on hand you just saw Sean Styles there whipping up Edition now we have Sam the cooking guy we’ve also got Mike the CEO of brain and grit Collective as well as Gavin head chef right yeah all right what newest idea from Sam the cooking guy himself is bosta right bosta the exclamation point um cocktails in Italian inspired eats we’re in Little Italy where graze was right sometimes you make a change we made a significant change a rebranding yes leaned into the neighborhood and we have a whole new menu whole new staff new crew and I’m not going to lie it’s fantastic I’ve tried it it’s delicious fantastic awesome area too to be right in that Center uh of Little Italy where there’s always just so much energy you got the food hall right across the street so many food options um you two have known each other for quite a while tell us about the collective and just about how you guys have have started to make these restaurants inspired by Sam himself honestly Sam is inspiring I mean that’s that’s where it all begins and and both him and Gavin have done a fantastic job with the menu um so it really starts with the food but with Basta you know we got to a point on you you can see it on the shirt where it says enough is just the beginning right and that’s part of the the feel for the menu you try a little bit of this a little bit of that and you just can never have enough but we also got to a point with grace that we had enough right and uh just keeping it real it was just time for a change uh our team wasn’t inspired we weren’t inspired um so we got an opportunity to get back at you know what we really care about and that’s taking care of the guest when you two get together and start whipping up some ideas how does that work is it really just thrown things out and seeing what what sticks well it’s mostly Sam has crazy ideas and I try and rain it in and make it workable this is as true a proper uh partnership collaboration as I’ve ever been in Gavin is a classically trained chef from England if it wasn’t obvious I can no I’m not classically trained in anything actually but I’ll have an idea for something and Gavin will help make it better so some of the stuff on the on the table right let’s go through this is this is our deconstructed canoli if you have ever eaten a canoli or want to share it you can’t one bite and it’s all over your shirt and pants so we call this canoli chips and dips it’s the canoli inside with the shells already broken for diving everything in at Boston is super sharable great example of this this is our Italian Chicken and Waffles we can’t make enough of these they sell it almost every day it’s not Fried Chicken it’s pan seared finished in the oven with a Savory palenta waffle with rosemary our beautiful lasagna on the Italian flag three sauces below this is our uh housemade noi Parisian style we get it crispy a little catcho with Pepe aoli there and this is something we all are in love with this is our house tortillini there’s ricotta inside lemon but and the asparagus of course but this is crem fresh with herb oil and they both Pour at the same time wow and they make for the most delicious delightful flavors they really do yeah uh this is what I think is really cool about this is kind of like combining do you say top us with like Italian like where you’re you know it’s a it’s a shared kind of platform for every absolutely it you know if you came to my house for dinner it’d be a little bit of a lot of things we think that’s a much more interesting way to eat Gavin likes that we both love Asian food and the Asian food world isn’t a big plate of one thing and you just go through it yourself it’s a little bit of a lot of things keep talking take a bite what’s this dipping SAU that’s the catcho a Peppe aoli so it’s mayale it’s pecorino it’s lots of black pepper little bit of oil a little bit of salt as far as coming to location do people need to make reservations in advance can they just show up they can do both I mean we have Open Table readily available on Open Table and uh we’re accepting walk UPS as well remind people of where you guys are located uh it’s 555 West State Street uh sweet B so that’s down in Little Italy across from the Little Italy Food Hall um it’s at the intersection of date and Columbia awesome and there’s there’s also a valet parking uh on Friday and Saturday nights as well I was going to say Friday Saturday night is when things get particularly busy in that little little L area so makes sense you guys have any favorite dishes on the menu must uh must try I mean I think the noi and the chicken and waffles yeah I think we the same I was going to say I’m dipping right into it as we speak quick break in store we’ll be right back after this stay with us
