How to Make Sausage and Peppers Pasta | Weeknight Meal Idea and Leftovers



Need a weeknight meal idea that makes amazing leftovers? Try this baked sausage and peppers pasta! I made it last night and it was a 10 out of 10! Below is the recipe.

2 packages of Italian Sausage
1 onion, diced
1 green pepper, diced
1 red pepper, diced
1 tablespoon of garlic paste or 3-4 cloves of garlic, minced
1- 28oz can of crushed tomatoes
1 small can of tomato sauce
Salt and pepper to taste
1 tablespoon of Garlic and Herb Seasoning
Fresh basil, chopped
1lb of rigatoni pasta
1 tub of Ricotta cheese
1 egg
1/2 cup of Parmesan cheese
1 cup of mozzarella cheese
1 teaspoon of garlic and herb seasoning or dried parsley
Salt and pepper to taste
1 bag of mozzarella cheese for topping

1. In a large stockpot, brown chopped sausages. Drain excess grease and add chopped veggies
2. Add crushed tomatoes and tomato sauce. Season with garlic and herb seasoning, salt and pepper.
3. Add fresh basil and simmer sauce for 30 minutes.
4. In a small bowl, combine ricotta cheese, Parmesan cheese, egg, mozzarella cheese, salt, pepper, and garlic and herb seasoning. Set aside.
5. Cook pasta according to box directions.
6. Combine cooked pasta with the sauce.
7. In a casserole dish, add half the pasta and top with dollops of ricotta cheese mixture.
8. Add the rest of the pasta and top with mozzarella cheese.
9. Cover loosely with foil and bake on 375 degrees for 25 mins.
10. Remove foil and bake for 10 more minutes until the cheese has browned.
