Rotolo di Gelato
Ingredients:
4 eggs
1 cup sugar
1.5 all purpose flour
1 tsp vanilla extract
1 tsp baking powder

Instructions:
Preheat the oven at 350 degrees
Add ingredients into your mixer beginning with your eggs.
Prepare your sheet pan with parchment paper, pour the mixture on your pan evenly, flatten it out for no bumps.
Cook until lightly golden.
While the cake is still hot, place your kitchen towel on top and begin to gently roll. Let it sit and cool well. Once the cake has completely cooled place, unroll it on a large piece of foil. *see video.
Spread your iced cream evenly and begin to roll tightly. Fold your corners in.
Place in the freezer until it is solid.
Remove it from the freezer five minutes before you serve, this makes it easier to slice.
Depending on the flavour of ice cream you choose, you can finish it will sprinkled icing sugar or cocoa powder. Enjoy !
