Chicken Caesar Sandwich Recipe

Ingredients
– 1 ciabatta roll
– 1 chicken cutlet (seasoned and cooked)
– 2-3 romaine lettuce leaves, washed and chopped
– 2 tbsp Caesar dressing (recipe below)
– 1 tbsp freshly grated Parmesan cheese
– 1 tbsp softened butter
– 1/4 tsp Italian seasoning
– Salt and pepper to taste
– anchovies (optional)

For Caesar Dressing:
– 1 tbsp mayonnaise
– 1 tsp Dijon mustard
– 1 tsp lemon juice (freshly squeezed)
– 1 tsp grated Parmesan cheese
– 1/4 tsp Worcestershire sauce
– 1 small garlic clove, minced
– 1 tsp olive oil
– Salt and pepper to taste

Instructions:
Step 1: Make Caesar Dressing
1. In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, Parmesan cheese, Worcestershire sauce, and minced garlic.
2. Slowly whisk in the olive oil until the dressing is smooth and creamy.
3. Season with salt and pepper to taste. Set aside.

Step 2: Prepare the Chicken
1. Season the chicken cutlet with salt, pepper, and a pinch of Italian seasoning.
2. Heat a skillet over medium heat. Cook the chicken for about 4-5 minutes on each side, until golden brown and fully cooked (internal temperature of 165°F).
3. Remove the chicken from the skillet and let it rest for a few minutes. Slice the chicken into thin strips.
Step 3: Toast the Ciabatta Roll
1. Preheat your oven to 375°F.
2. In a small bowl, mix the softened butter with Italian seasoning.
3. Spread the seasoned butter on both sides of the ciabatta roll.
4. Place the roll on a baking sheet and toast it in the oven for 5-7 minutes until lightly golden and crispy.

Step 4: Assemble the Sandwich
1. Spread 2 tbsp of the homemade Caesar dressing on the bottom half of the toasted ciabatta roll.
2. Layer the sliced chicken on top of the dressing.
3. Add the chopped romaine lettuce on top of the chicken.
4. Sprinkle with 1 tbsp of freshly grated Parmesan cheese.
