TANG Foolish


House-sitting and couldn't find sugar. Yesterday I made a TANGzhong dough which was incredible. Self inspired, I decided to make an overnight poolish with it as well and… So crispy and so chewy. I woke my partner up with the crunch, despite the pizza still having a bit of flop. The overnight preferment really upgraded flavour compared to the gelatin treatment from yesterday.

Legit my favourite pizza I've made so far.
