    Dough:

    300g All-Purpose Flour or Bread flour
    60g Levain (OR 3g instant yeast)
    200g Water
    6g Salt

    Toppings :

    Tomato Paste
    (I mixed in some smoked sea salt, black pepper, olive oil and fresh basil leaves)
    Mozzarella Cheese
    Fresh Basil Leaves 🍃

    🅜🅔🅣🅗🅞🅓

    Here’s what you have to do

    ➡️ Mix all the ingredients together until you get a nice cohesive mass. Cover and let it rest for 30 min

    ➡️ Do 1 set of stretch-and-fold, rest 30 min

    ➡️ Do 2-3 sets of coil folds with 20-30 min rest in between each set

    ➡️ Cover and let the dough double

    ➡️ Transfer the dough to a bed of semolina and dimple the dough

    ➡️ Shake off excess flour and place the dough on a well-oiled baking pan

    ➡️ Bake at 250C for 10 min

    ➡️ Remove pizza from oven and put on mozzarella cheese

    ➡️ Continue to bake for another 4-5 min to melt all that gooey cheesy goodness!

    ➡️ Add some fresh basil leaves and drizzle olive oil
