Rigatoni in a mushroom & sausage cream sauce
Sunday dinner just got elevated with my mama’s incredible pasta. The rigatoni perfectly captures the hearty chunks of savory sausage and earthy mushrooms, all bathed in a velvety sauce that clings to every bite. Each forkful is a celebration of bold flavors, slow-cooked to perfection.
And not to mention Mama flambéing was pure joy! 😂 She had so much fun with the process, laughing and getting excited as the flames lit up the pan. It wasn’t just about making the dish it was about the thrill of trying something new and having a blast while doing it. Watching her enjoy every second made the whole experience even more special!

Rigatoni with Italian sausage and mushrooms
Ingredients :
1 lb of sausage
1/2 cooking onion
2 cloves of garlic
10 creamini mushrooms
6 green olives
1 cup of cherry tomatoes
1.5 cup of heavy cream
1.5 oz of cognac
1/4 cup of parsley

Instructions:
Preheat your large pan on the stove top and add your olive oil and sausage (sausage meat has been removed from casing). Let cook for ten minutes on medium heat. Once the sausage has cooked through, remove from oil. In the same pan add more olive oil, mushrooms, salt and pepper. Once mushroom have sautéed and released juices and dried up a touch. Remove your pan from the heat and add your cognac. Once your cognac has evaporated you can add onions and garlic. Mix well and add half cup of water, let simmer for a few minutes. Add cream, green olives and parsley. Season salt and pepper to taste and finish with grated Parmesan. Once the pasta has been cooked to Aldente you can drain and add to sauce. Toss well. If it’s too dry add pasta water. Serve and enjoy!
