INGREDIENTS:
Side of fresh salmon
Sea salt
Sugar
Fresh rosemary
Extra virgin olive oil
Garlic cloves
Whole black peppercorns
Whole lime
Small white onion
Fresh dill
Soy sauce
Sesame oil
METHOD:
1: Remove skin from salmon
2: Finely chop 3 sprigs fresh rosemary
3: Place salmon in salt, sugar and rosemary mixture
4: Place in fridge and leave to marinade for 24 hours or at least overnight
5: Remove salmon from fridge once marinated and rinse well
6: Dry the rinsed salmon well with paper towel
7: Quarter the lime and peel three garlic cloves
8: In a Pyrex dish, add extra virgin olive oil (enough to cover salmon), garlic cloves, black peppercorns, fresh rosemary sprigs. Squeeze limes and add to mixture
9: Place salmon in olive oil marinade and allow to sit for at least 24 hours (preferably a couple of days)
10: Once marinated, remove salmon and slice thinly
11: Finely dice a small white onion and some fresh dill
12: Add salmon to plate and garnish with onion, dill, sesame oil & soy sauce
