Pork Mocetta is made using the filet of the pork, Mocetta means dried piece of meat. It is an ancient salami composed of dried muscle which is flavoured with spices and herbs and left to dry.
Piero shows us how easy it is to dry cure and make your own pork mocetta at home using traditional methods he learnt in Italy.
