Easy Italian Almond Cookies Recipe with Lemon Zest

Easy Italian Almond Cookies Recipe – If you have almond flour make this amazing Italian almond paste cookies. The recipe is from southern Italy, Sicily region. Perfect with your coffee or tea, in the morning and afternoon.

Ingredients
• 450g (1lb) Almond Flour
• 400g (14oz) Sugar
• 4 Egg Withes
• 1 tsp Vanilla (or Almond) Extract
• 3 tsp Rum (Optional)
• 2 Lemon Zest
• Some Almonds
• Some Powdered Sugar

Instruction
1. Take a bowl and mix almond flour, sugar, and Lemon zest in it.
2. Now whisk the egg white and add to the dry ingredients. Mix them well for 2-3 minutes with a spoon.
3. After that, add vanilla extract, and rum to the dough and mix them well.
4. Shift the dough into the small bowl, cover it with plastic foil, and put it in the refrigerator for a couple of hours.
5. Now make the cookies. Make small balls from the dough and coat them with sugar powder.
6. line dish with parchment paper and place the cookies on it. Gently press one almond on each ball.
7. Bake them for about 20 minutes at 350*F (180*C). Cool on a wire rack and serve with tea or coffee.

Some Useful Tips
• It’s also a great way to dispose of leftover egg whites.
• You can try to make from other nut flour – pistachios or hazelnuts.
• You can store the cookies in a closed container for up to two weeks.
• If the dough becomes very soft and sticky, add more almond flour.
• The cookies spread on their own!! Therefore, do not try to fit all the cookies on one baking sheet. Leave large gaps.
