Do you ever struggle to figure out what is for dinner? Honestly, who hasn’t? Well, hopefully you will be able to solve that dilemma by following these easy recipes that are sure to please.
Veggie Chopper:
GARLIC, TOMATO, FETA TIKTOK PASTA RECIPE
Ingredient List:
Pasta
Mini or baby tomatoes
A block of your favorite feta
10 garlic cloves
Olive oil
Salt and pepper
Dried Basil
Dried oregano
Italian seasoning
Pre heat the oven to 400. Place the block of feta in a 9×9 baking dish. Add the tomatoes and whole cloves of garlic around the feta. Drizzle olive oil all over tomatoes and garlic, make sure you use enough to coat everything. Next add all the spices and seasonings and mix around with a spoon. Pop in the oven and leave in for 45 min.
In the meantime set a timer for 20 min. After 20 min start to boil salted water for your pasta. Cook pasta until al dente. As the pasta gets finished the timer for the sauce should be ready. Add pasta to the sauce or the sauce to the pasta and combine. Serve with some parmesan sprinkled on top.
VEGGIE CHICKEN SKEWERS RECIPE
Ingredient List:
Chicken (I used smart tenders faux chicken)
Onion
Red, yellow, and orange bell peppers
Zucchini
Crimini mushrooms
Pineapple
Your favorite sauce (BBQ, Teriyaki, etc)
Wash and cut all veggies to the desired size. Place all the veggies and the chicken into a bowl or plastic ziplock bag and pour your sauce, making sure to coat everything. Do not marinate the pineapple. Let sit for at least an 1-2 hours. If you are using wooden skewers soak them in water before placing on the grill to prevent a fire. Take all of the ingredients and make your skewers. Heat your barbecue to medium-high heat and and place skewers directly on the rack, rotating every few minutes. Be sure to rotate when grill marks are visible and until the skewers are cooked all the way through.
GUACAMOLE RECIPE
Ingredients List:
Avocados
Lemon/lime
Red onion
Tomatoes
Cilantro
Garlic
Salt and pepper
Chili lime seasoning
Chop and Mix all ingredients together.
TAQUITO ENCHILADAS
Ingredient List:
Taquitos
Enchilada sauce
Shredded Mexican blend cheese
Optional topping ideas: diced onion, olives, corn, diced bell pepper
Pre heat the oven to 350. Place a single layer of taquitos in a baking dish. Pour enchilada sauce to cover all of the taquitos. Next add any of the toppings, diced onion in my case. Then layer with a generous amount of shredded cheese. Cook for 20-25 min or until cheese has melted on top.
LASAGNA RAVIOLI
Ingredient List:
Ravioli of your choice
Marinara sauce
3 colors of bell peppers
1 small onion
2 medium zucchinis
6 garlic cloves
Ricatta
Parmesan
Mozzarella
Salt
Pepper
Spicy Italian Seasoning
Basil
Start by preheating oven at 375 degrees. Chop veggies and slice zucchinis into thin strips. Place diced veggies into an oiled pan, along with all seasonings and marinara sauce and sauté on low heat until fragrant. Spread 1/3 of the sauce evenly on the bottom of a 9×9 oven-safe dish. Distribute ravioli evenly on top of sauce. Place zucchini strips atop ravioli. Spread ricotta evenly on top of zucchini. Spread sauce atop ricotta. Sprinkle parmesan. Repeat, then top with mozzarella cheese.
Cover with hooded foil and bake for 35 minutes. Remove foil and bake for another ten minutes. Let sit for 15 minutes before cutting.
