We just got a pasta machine, so we hosted a pasta night with some friends. We rolled pasta and made lasagne. Nobody made it to midnight due to ensuing food coma, but it was a lot of fun and delicious!
Dough: 250g 00 flour, 2 eggs and 100g sourdough starter
Method: Make a well, crack eggs and add starter inside well, scramble eggs and starter and slowly incorporate flour into a shaggy dough, rest 30 minutes, knead into a smooth dough, refrigerate overnight, bring to room temp, roll pasta sheets.
Recipe: My husband made the sauce from scratch, so I don’t have the recipe. I know the base was fresh tomatoes, carrots, onions, garlic, shiitake mushrooms, bell peppers, and seasonings.
The ricotta filling contained 15 oz ricotta cheese, 1 egg, about a cup of shredded mozzarella, about 1/2 cup shredded Parmesan, Italian seasoning and fresh thyme.
Topped with fresh and shredded mozzarella, freshly grated Parmesan and freshly grated Asiago and more fresh thyme.
Baked covered at 350F for 45 minutes, then 15 minutes uncovered.
