Did we do something wrong?


My bf and I tried to make homemade pasta from scratch last night and really struggled! I have a pasta machine (a manual crank roller, not a fancy kitchenaid). That worked great! But we found it really hard to knead the dough and get it to that silky consistent ball of dough it dish poised to be before flattening it. I watched so many videos and did research, but we were kneading for over 20 minutes and still could barely yield enough dough for 6 raviolis (pictured here). To our credit, they were good (when cooked and combined with sauce obv). Any advice?? Here’s exactly what we did:

4 eggs
2 1/4 cup of 00 flour
Pinch of salt
A few drops of water
A ton of kneading!
