sorta a lady photo on my behalf I was starving and didn't have time to plate all pretty life!
1 jar of fire roasted red peppers
grated parm
fresh parsley
2 shallots (or 1 whole onion)
5 cloves of garlic
a splash of heavy cream (or half and half)
tablespoon of butter
salt and Crack black pepper to taste

directions:
1 cook shallots and garlic in butter on a small skillet to perfectly golden brown, transfer to blender
a whole jar of red peppers (dry red peppers no brine needed) add to blender, then blend
once blended add to a pan, spread and add cheese and cream and season to taste
cook and simmer on low heat for 15 minutes
add cooked pasta to finished sauce
garnish with fresh parsley.
