In order to appreciate aubergine, I am of the view that it needs to be sliced thick as seen in this video.
In Italy, if you ask for mixed grilled vegetables in a restaurant, this is how they typically cook and serve them to you along with courgettes and a slightly purple lettuce like leaf, which is a bit bitter to taste, but still very nice.
