Ingredients:
2 tablespoons Black peppercorns
1 cup Pecorino Romano cheese grated
1 cup Reserved pasta water
10 oz Spaghetti

Instructions:
Use a mortar to grind peppercorns to a medium coarse grind. Toast over medium heat to extract the oils for two minutes. Leave the peppercorns in your pan with the heat off.
Now Cook your spaghetti (or pasta of choice) in lightly salted water. 2 minutes before the pasta is done, reserve 1 cup of pasta water and set on the counter to let cool ; this is the key to avoiding lumpy cheese! Add pasta water straight from the pot to the peppercorns and let simmer on very low heat.
Now add 3/4 of your grated cheese in a bowl. Add your reserved cooled pasta water to the bowl, stirring until you get an emulsified sauce. Now add your drained spaghetti to your peppercorns, mix well. Remove from heat and add your creamy cheese sauce and stir.
At this point your pasta should start to absorb the sauce, add additional pasta water and mix if the sauce is too thick. Continue mixing until you achieve the perfect consistency (refer to video). Add freshly grated cheese on top, Serve and enjoy!
