Italian Meatballs in Tomato Sauce (Inspired by *The Godfather*)

Ingredients:
For the Meatballs:
– 400g ground pork and beef mix
– 1 egg
– 1 small onion, finely chopped
– 1/2 cup breadcrumbs
– 1/4 cup cream
– Salt and pepper to taste
– 1 tsp herbes de Provence

For the Tomato Sauce:
– 2 tbsp olive oil
– 3 cloves garlic, minced
– 800g canned chopped tomatoes
– 2 tbsp tomato paste
– 1 cup red wine
– 2-3 tsp sugar (to taste)
– Salt and pepper to taste
– 200g spicy Italian sausage, fried and sliced
To Serve:
– Spaghetti, cooked according to package instructions
– Grated Parmesan cheese (optional)

Directions:

1. Prepare the Meatballs:
– Preheat the oven to 175°C (350°F).
– In a large bowl, combine the ground meat, egg, onion, breadcrumbs, cream, salt, pepper, and herbes de Provence. Mix until well combined.
– Roll the mixture into small balls, place them on a baking tray, and bake for 20-25 minutes until golden and cooked through.

2. Cook the Sausage:
– While the meatballs are in the oven, fry the spicy Italian sausage in a pan until browned. Slice into 2 or 3 pieces depending on the size.

3. Make the Tomato Sauce:
– Heat olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
– Add the chopped tomatoes and tomato paste, and cook for 5-7 minutes until the tomatoes start to break down.
– Stir in the **1 cup of red wine**, sugar, salt, and pepper. Let the sauce simmer for 10-15 minutes to reduce slightly.

4. Combine and Simmer:
– Add the baked meatballs and sliced sausage to the tomato sauce. Stir gently to coat everything in the sauce.
– Let the mixture simmer on low heat for an additional 15-20 minutes, allowing the flavors to meld together.

5. Serve:
– Toss the sauce and meatballs with cooked spaghetti and serve hot. Garnish with grated Parmesan if desired.
