  1. It kind of looks like bubble and squeak we have in the UK. Fry up leftover potato and veg from a Sunday roast dinner and have it for dinner the next day.

YUM, I need to have my Daughter make this recipe…she loves to cook…not me so much anymore………. love your Mom & Dad…..her Cake looked delicious too….. so glad you're on YT, I hate those shorts…..way too short, they were cute tho and would watch them….and yes Mom did get the last word lol…..your Dad is so funny…..I need to share this with some friends & family….. but it goes away so fast…..I had to go back and open it up again to share…..!!

    Love you guys such a beautiful Family

    This is how my Nonna-in-law showed me how to make it.

    4-6 cloves garlic, crushed

    1/8 pound pancetta, sliced and chopped

    2 tablespoons extra virgin olive oil (EVOO)

    1 medium onion, chopped

    2 pounds escarole (2 medium bunches or 1 large bunch), washed and coarsely chopped

    2 cans cannellini beans (14 ounces each), drained

    1-quart prepared chicken stock or broth

    A couple of pinches of nutmeg, ground or freshly grated

    Coarse salt and black pepper

    Shaved Parmigiano Reggiano cheese, for topping

    Warm crusty bread, for mopping

  6. My mom made Minestra. She usually used Dandelions in the early springtime when you get them. She also used the potatoes, white beans and all the seasonings. Yum.

  7. My great Nonna made it with dandelions. All our non-Italian neighbors thought we Italians were crazy because we’d go pick their dandelion leaves. Oh memories ❣
