We’re coming to the end of summer and my tomatoes finally decided to ripen…all at the same time🙈 So I decided to turn my excess tomatoes into an easy marinara sauce🍅

I don’t really follow any rules here. I use whatever tomatoes I have on hand and don’t bother with peeling the skins, although you can totally do that if you like 😊

Here’s what you’ll need👇
2 carrots
½ onion
8 cloves of garlic
Tomatoes🍅 around 3 pounds, but like I said, I don’t really follow any rules here😋
Salt, pepper, italian seasoning, and other herbs you enjoy like basil or oregano
Optional: balsamic vinegar and/or coconut or cane sugar

INSTRUCTIONS
🍅Cut your carrots into large chunks, quarter your onion, peel your garlic, and halve your tomatoes.
🍅Add everything to a sheet pan with the tomatoes face down, and sprinkle a generous amount of salt, pepper, and italian seasoning on top.
🍅Roast at 450F for about 45 minutes, or until the tomatoes have fallen and the veggies are slightly charred.
🍅Add everything to a food processor or blender and pulse or blend until you reach your desired consistency.
🍅Taste and adjust to your liking. I added a splash of balsamic vinegar, 2 pinches of salt, and 1 tbs of coconut sugar to help balance out the flavors.
🍅Add to glass jars and enjoy within a week, or freeze for later. Make sure to leave some room at the top if they’re going in the freezer.
