  3. I use the pizza analogy.. Pizza is 3 ingredients.. Look how drastically different every shops is.. From disgraceful, to exceptional… simple is as simple as you make it

  4. Disagree about the "great chefs". Most of them tend to overcomplicate dishes. Like, 7 different drops of sauces that will mostly stay on the plate and won't go to your mouth, micro greens, foams, airs, some grated freeze-dryed bullshit and much more crap just for a single bit of protein.
    A good dish doesn't need 50 different ingredients. One thing is building layers of flavor, and the other is adding 50 ingredients that people won't event notice.
