Disagree about the "great chefs". Most of them tend to overcomplicate dishes. Like, 7 different drops of sauces that will mostly stay on the plate and won't go to your mouth, micro greens, foams, airs, some grated freeze-dryed bullshit and much more crap just for a single bit of protein. A good dish doesn't need 50 different ingredients. One thing is building layers of flavor, and the other is adding 50 ingredients that people won't event notice.
