    • 1 cup ricotta cheese

    • 1 cup cherry tomatoes (halved)
    • Olive oil

    Instructions:

    1. Prep the Eggplant:
    Slice the eggplant into thin layers, drizzle with olive oil, and season with salt and pepper. Bake at 425°F for 20 minutes.
    2. Cook the Meat Filling:
