First and foremost, I hope you’re all keeping safe in these uncertain times. Now that most of us are home bound, it’s the best time to spend more time cooking sustainable but delicious food. Here’s a recipe that uses all those pantry essentials. So those who are stocking piling on pasta and pasta sauces – yes you know who you are (!) – put them to good use in this popular Italian comfort food. Shout-out to all Italians, this recipe is a tribute to you all, bless you and stay safe. Happy cooking!

Ingredients:
1 packet (250g) penne pasta
6 sausages of your choice
1 – 1.5 cups Italian marinara sauce
1 large tomato (chopped)
1 medium onion (chopped)
5-6 chestnut mushrooms (sliced)
2 tbsp passata or 1 tbsp tomato purée
2 tbsp double cream (optional)
2 tbsp preserved anchovies (in oil) or 1 tbsp anchovy paste
2 tbsp grated parmesan Reggiano
2 – 4 tbsp grated cheddar cheese (optional)
2 tbsp olive oil (for cooking)
2 cloves of garlic (finely minced)
1 tbsp butter
50 – 70ml water or white wine
Few sprigs of fresh thyme
Few sprigs of fresh oregano
1 tsp dried oregano
1 tsp white pepper
Salt & pepper to taste
